About

I am a Registered Nutritionist (RNutr) specialising in nutritional science.

I have been a lecturer, senior lecturer and course leader in nutrition programmes at several universities in the UK since 2011.

My research focuses on the physiological effects of phytochemicals from edible plants on healthy populations and those at risk from chronic diseases such as cardiovascular disease and obesity.

I am currently working in the areas of public health nutrition and public engagement with science to promote health and prevent diet-based diseases. My aim is to translate the science developed in nutritional laboratories into practice.

Research

My research focuses on the physiological effects of phytochemicals from edible plants on healthy populations and those at risk from chronic diseases such as cardiovascular disease and obesity.

I have conducted multiple human dietary intervention trials investigating the effects of chronic and acute consumption of phytochemical-rich foods, such as fruits and vegetables; juices; soups; champagne; and green tea on blood vessel function, blood pressure and other risk factors for cardiovascular disease. Furthermore, I conducted studies to investigate the effects of fruit and vegetable-enriched products on measures of satiety, consumer acceptance and post-processing phytochemical concentrations.

My more recent research has focussed on Public Health Nutrition in deprived communities, especially exploring barriers and facilitators to increasing fruit and vegetable consumption through a participatory approach with community stakeholders.

My research has been funded by government agencies, charities, and commercial food companies nationally and internationally.
